Master chocolatier offers once-in-a-lifetime classes at CRC

Do you love chocolate? The Community Resource Centre (CRC) in Clearwater is thrilled to present two chocolate making classes with world-renowned Belgian chocolatier Philippe Vancayseele.

Chocolate Making 101 (for everybody):

Wednesday, Aug. 24, 7:00 p.m. to 9:30 p.m.

Cost: $25 (includes a gift from Helmcken Chocolates)

- Introduction and DVD presentation of the harvest of cocoa and production of chocolate

- Theory about crystallization of chocolate (different methods)

- Single molded pralines

- Truffles

- Hollow figures (molding and coloring)

- Chocolate decorations

- Chocolate showpiece for Halloween (silent auction with proceeds going to Dr. Helmcken Memorial Hospital)

Chocolate Making 201 (for cooks, chefs,

bakers, and people with a passion for chocolate):

Wednesday, Aug. 24, 2:00 p.m. to 4:30 p.m.

Cost: $30 (includes a gift from Helmcken Chocolates)

- Introduction and DVD presentation of the harvest of cocoa and production of chocolate

- Theory about crystallization of chocolate (different methods)

- Single and double molded pralines with nut fillings

- Cut pralines with nut filling and ganache

- Chocolate decorations

- Chocolate showpiece for Halloween (silent auction with proceeds going to Dr. Helmcken Memorial Hospital)

During each of the classes, Philippe will create a chocolate showpiece that will be auctioned off with the proceeds going to the Dr. Helmcken Memorial Hospital.

Philippe Vancayseele has been impassioned by chocolate since his childhood. After the successful completion of his studies in pastry, and specializations in chocolate and confectionery at the Culinary Institute (COOVI-PIVIT) in Brussels, he worked for several quality chocolate makers in Belgium. He has always shared the passion and enthusiasm that he has for the product, first as a schoolteacher and since 1994 as global technical advisor for chocolate producer Callebaut. Philippe is currently the director of Barry Callebaut Chocolate Academy in Wieze, Belgium. His expertise in his field enables Philippe to travel around the world instructing chocolate making, visiting trade shows, special events, and judging chocolate competitions.

Philippe and his family are currently on holidays in British Columbia. We are so fortunate to have someone of Philippe’s caliber willing to share his expert knowledge and experience with our community. Philippe looks forward to sharing his zest for life and passion for chocolate with you!
