Kim’s recipe for Sorta Pakora makes a good snack.

By K.A. Pendergast

This is a throw together version of Pakora. It is oil free and gluten free. It can be made vegan with the proper spices as well.

Ingredients

½ cup almond flour

½ cup potato starch

1 tsp herb and garlic spice (your choice brand)

1 tsp garlic and herb spice (your choice brand)

2 tbsp chopped green onion

1 cup chopped spinach leaves

1 cup shredded zucchini

½ cup shredded broccoli

6 tbsp water

Directions:

Yes, I used both types of those spices instead of traditional ones but use whatever types you prefer. Mix together and throw in spoonful globs or packed and squished balls, your choice, onto a sheet of parchment paper and place in preheated oven at 435 degrees but temps may vary. Cook until crispy, turning once, for half hour or so and enjoy. I served mine with tzasiki for a delicious snack! Best served warm!
